Bran berry muffins

Introduction

Classic bran muffins. Very moist and good. I have also made them with raisins or dried cranberries and they are also good this way. Classic bran muffins. Very moist and good. I have also made them with raisins or dried cranberries and they are also good this way.
Number of Servings: 12

Ingredients

    1.5 cups oat bran
    1 cup nonfat milk
    1 tbsp vinegar
    1 egg
    3 tbsp canola oil (or other vegetable oil)
    2 tbsp molasses
    1 cup whole wheat flour
    1.5 tsp baking powder
    1.5 tsp baking soda
    1/2 tsp salt
    1.75 cup chopped frozen mixed berries (or any single berries)

Directions

Mix oatbran, milk and vinegar and allow to sit at least 5 minutes.

Beat egg with oil and molasses. Add oatbran mixture and mix.

Add flour, baking powder, baking soda and salt and mix until combined. Fold in berries.

Line paper muffin cups or sprayed unlined cups. Fill 2/3 full and bake for 17-20 minutes.

Serving Size: Makes 12 good size muffins.
