    2 Chicken drumsticks (skin removed)
    2 Chicken thighs (skin removed)
    1 small onion, roughly chopped
    1 tablespoon honey
    1 fresh chili (or dry equalivalent)
    Juice from 1 lime
    1/2 cup arborio rice
    1 tsp garlic
    1 chicken stock/bouillon cube (or equivalent stock)
    1 small zucchini (around 100 grams) sliced
    6 mushrooms sliced
    6 stalks of asparagus sliced
    1/3 cup 2% milk (semi-skimmed)
    2 tablespoons fresh basil


Blend lime juice, honey, onions and chilli pepper together until smooth. Place chicken pieces in an oven proof dish and cover with blended ingredients. Cover with foil and bake for around 30 minutes. While chicken is cooking, spray frylight onto nonstick pan and quickly sautee rice, garlic and veggies (don't cook through). Remove from heat. Boil around 2 cups of water and dissolve stock cube. Return rice mixture to heat and add stock water around 1/2 cup at a time, allowing the mixture to simmer uncovered on low heat until water begins to evaporate, then stir in a little more stock water, and continue to do this. Once rice is nearly completely cooked and virtually no water in pan, remove from heat, and stir in milk (gradually to avoid curdling). Add chopped basil leaves, then cover pan and set aside. Remove chicken from oven, remove foil and return to oven to cook/brown for 15 minutes. By the time the chicken comes out of the oven, the rice should have absorbed the milk, leaving a creamy risotto dish. Serve is 2 pieces chicken and half rice. If you wish, a little parmesan cheese on the rice is nice but this will be extra calories. Enjoy!
