Macaroni Salad #2

Number of Servings: 6

Ingredients

    3 c. cooked macaroni shells
    1/4 c. garbanzo beans
    1/4 c. kidney beans
    1/4 c. canned green beans
    1/4 c. chopped green pepper
    1/4 small onion, diced
    2 small avocados, diced
    3 large or 4 small boiled eggs, diced
    2 Tbsp. Low fat vegetable oil
    1 tsp. Balsamic Vinegar
    Salt & Pepper to taste.
    1 oz. grated Parmesan cheese

Tips

I use Mrs. Dash or my own seasoning mix instead of salt and pepper to lower sodium.


Directions

Place cooked noodles, vegetables, and eggs in large bowl. Add diced avocado, oil and vinegar, and cheese. Mix well. Season to taste with salt and pepper.
