Creamy Leek/Potato/Chicken Soup

Introduction

This is great with a grilled cheese sandwich. This is great with a grilled cheese sandwich.
Number of Servings: 2

Ingredients

    2.5 cups of chicken stock
    1 medium potato, diced
    1.5 cups of leeks, chopped.
    2 oz chicken breast.
    1 cup 1 % milk
    .5 tsp salt
    .5 tsp pepper
    1 Chicken cube

Tips

Do not over heat after milk is added or it will curdle.


Directions

Heat 2.5 cups of chicken stock on the stove.
Add half a large raw potato, diced, and 1.5 cups of leeks, chopped. Add the chicken stock, salt and chicken breast.
Simmer for 15 minutes. Take out 1 cup of the soup and blend till smooth. Add back in to soup. Add the milk and pepper and any other seasonings you like. Heat till simmering again. Serve.
