Paleo- Ham & Veggie Frittata

Ingredients

    Broccoli, fresh, 1 cup, chopped
    Onions, raw, 0.5 cup, chopped
    Summer Squash, 1 medium
    Ham,1 cup, diced
    Sun Dried Tomatoes, 0.5 cup, chopped
    Egg, fresh, 7 large
    Salt, 1 dash
    Pepper, black, 1 dash
    Coconut Oil, 2 tbsp

Directions

Preheat oven to 375.
Combine eggs and salt & pepper in a bowl, beat with a wire whisk, set aside.
Place a medium size oven safe skillet over med-high heat.
Add oil. When oil is hot add veggies & ham, cook until tender.
Pour egg mixture evenly on to veggie mixture and reduce heat to low.
Cook until edged begin to look firm. Remove from stove top and place into oven. Bake for 15-20 minutes or until center is set and no longer jiggly.
Top with parsley. Cut into wedges. Makes 6-8 servings
