# Olive Oil, 1 tbsp
# Scallions, raw, 2 medium (4-1/8" long) green part only
# Celery, raw, 1 stalk, medium (7-1/2" - 8" long)
# Onions, raw, 1/2 medium (2-1/2" dia)
# Chicken Broth, 3 cup
# Peas, fresh, 4 cup
# Salt, 1/4 tsp
# Fresh Mint Leaves, 1/3 cup
# Yogurt, plain, low fat, 1/2 cup
2. Add the broth and bring to a boil. Add the peas and salt. Simmer for 10 minutes.
3. Carefully transfer the mixture to the bowl of a food processor fitted with a metal blade. Add the mint. Puree until smooth. Cover and chill for at 1 hour.
4. Spoon the soup into 4 serving dishes. Dollop 2 tablespoons of yogurt in the center of each.
