Number of Servings: 16

Ingredients

    Double recipe:
    2 cups corn meal
    2 cups unbleached white wheat flour
    1 tsp salt
    8 tsp baking powder
    1 tsp chili powder
    4 - 8 TB natural sugar, granulated
    2 cups milk, 1%
    2 extra large eggs
    1/2 cup vegetable oil
    1 cup canned yellow corn
    1/3 cup chopped fresh hatch peppers (or peppers of choice)
    4 oz shredded sharp cheddar cheese

Directions

Combine dry ingredients. Stir in wet ingredients until just combined. Bake 23-25 minutes at 425 degrees until toothpick comes out clean.
