3 lbs Chicken Breast, cut into strips
3 Bell peppers, cut into strips
3 Onions, sliced
Oregano, ground, 2 tbsp (remove)
**McCormick ground cumin, 2 tbsp (remove)
*Coriander, Ground (1 Tbsp), 2 tbsp (remove)
Garlic, 6 cloves (remove)
*Lemon Juice, 5 lemon yields (remove)
Coconut Oil, 4 tbsp (remove)
Romaine Lettuce (salad), 8 lg leaves
Fold one end of the lettuce leaf up and roll like a burrito.
Heat oil in a large skillet over medium heat. Cook chicken mixture until chicken is cooked through, veggies are tender, and most liquid has evaporated.
Spoon into lettuce leaves and top with desired toppings. (salsa, avocado, guacamole, jalapenos, etc.)
