Ingredients

4 Cups Chicken Broth - Organic, low-sodium
1 small head of green or red cabbage, shredded
4 carrots, peeled and shredded
1 - medium size beet, peeled and shredded
1 Tablespoon Olive Oil
1 Cup chopped Red Onion
1/2 Cup Chopped Sweet Red Pepper (Bell Pepper)
1 28 ounce can Organic Crushed Tomaotes with Basil added
1 Tablespoon Cider Vinegar
1 Tablespoon Honey
4 cloves of garlic, crushed
1 tsp Cayenne Powder or Mrs. Dash's southwest seasoning (optional)
Directions
This makes about 10 cups - 1 Cup Servings
Bring chicken broth to a boil, add shredded beets, carrots and cabbage, reduce to a simmer. Chop the onions and red peppers and saute in olive oil until soft and translucent. Add to shredded vegetable mixture. Then add one can crushed tomatoes, vinegar, honey, garlic and southwest seasoning to the soup. Simmer another 15 - 20 minutes. Serve hot or cold and top with a small dap of non-fat sour cream if desired.
