Introduction

The marinade in this recipe can be easily altered to suit your taste. Try adding a clove or two of minced garlic and a sprinkle of fresh rosemary to finish. Ingredients

    8-4oz Boneless, Skinless Chicken Breast (Fresh or Frozen)
    1 cup water
    1/2 cup olive oil
    2 tbsp balsamic vinegar
    4 tsp dried onion flakes
    3 tsp italian seasoning
    3 tsp ground mustard
    2 tsp thyme
    2 tsp salt
    2 tsp black pepper

Directions

Mix olive oil, balsamic vinegar, italian seasoning, thyme, salt, pepper and onion flakes in 1 gallon resealable plastic bag along with 8 -4oz boneless/skinless chicken breast (frozen or fresh). Allow chicken to marinate for at least 1/2 hour. Heat grill place chicken on grill and sear both sides. Then cook until the meat is white through-out or at an internal temp of 180 degrees farenheit.

    My hubby and I really, REALLy enjoyed this. Had it with steamed veggies and whole grain rice last night, then today I had it on a spinach salad with mandarin oranges, slivered almonds and spray Asian dressing. Yummy! - 1/6/09

    I do not have a grill, but liked the recipe and followed it exactly and instead of grilling, after marinade for about 2 hours, I baked the chicken with all of the marinade for about 40 minutes on 350. Don't know what that did to the nutritional value, but it was terrific. I will make this often! - 2/11/08

    My wife did not care for this because she couldn't taste the balsamic. I, on the other hand, loved the taste that the ground mustard gave to this. One issue - the recipe doesn't include the water or the mustard. I assumed it was also supposed to be included with everything else and was correct. - 10/29/08

    I made this the other day with turkey breast instead of chicken and it was GREAT! I didn't have a grill available to me so I baked it for about 30 mins at 350. - 1/21/09

    I made this last night and it was fabulous! Since I didn't have the onion flakes, I used freeze dried chives instead. Loved that I could use up spices I already had. Will definitely be making this again...it's a keeper! - 6/25/10

    Lots of flavor! I wanted to use fresh herbs from the garden so I used chives instead of onion flakes and oregano instead of Italian seasoning and omitted the water and marinated it overnight. The whole family loved it! - 6/13/13

    This was great! The chicken was very moist and flavorful. It would be great in a salad. We didn't have the balsamic or ground mustard, so I just used apple cider vinegar and yellow mustard respectively. Still very good! - 1/5/09

    Very yummy on the grill! I was in a hurry so only marinated it right at 30 minutes. I think it would be even better with a longer marinating time. But, definitely an easy, tasty grilled chicken. - 7/7/08

    Loved it! I did modify:
    - 1/4 cup olive oil
    - apple cider vinegar (didn't have balsamic)
    - only 1 tsp black pepper
    - about 1 tsp thyme, 1 tsp poultry seasoning (I ran out!)
    Marinated for about 1.5 hours and grilled to 160 degrees (180 makes it tough and dry). It was incredibly good! - 7/3/08

    I made this last night. I only used half the olive oil and a little less than half the black pepper. I'm glad I cut back on the black pepper. My son liked the first few bites, but then decided it was too spicy for him. I thought it was perfect for me, and would probably not have liked it as is. - 2/8/08

    i havn't tried this version but i make something similar which is yummy... you mix in a spoon of honey to the balsamic vinegar aswell as finely chopped chilli peppers and crushed garlic and marinade the chicken for aslong as your willing to wait!!! cook tiil it goes a lovel dark glazy colour - 2/4/08

    I realize that the calorie counter counted all the oil in the marinade and that this doesn't have so many calories. This was a good meal and I used some of the chicken the next day in my salad. - 2/3/08

  • Tried this tonight for supper. Yummy way to marinate your chicken without buying those sodium-ladened packages of marinade.

    I only used half the oil and used onion powder instead of the flakes. Had BBQ on med-high and turned every so often . Will probably use less salt next time. A keeper recipe - 7/1/13

  • This came out super yummy! Didn't have italian seasoning-so I added dried thyme, basil, rosemary, oregano, red pepper flakes, garlic and onion powder. I grilled half in a George forman-juicy and tender-and broiled some-that kept more of the glaze on it. Served with baked sweet potato and asparagus! - 6/20/13
