IntroductionVeggie Delight Veggie Delight
1 medium zucchini
1 medium squash
1 medium eggplant
1 box of lasagna noodles
2 jars of your favorit sauce
2 pakcsof sliced mushrooms
1 can of black olives
1 block of firm tofu
1 10 oz bag of chopped spinach
With food processor, blend tofu, spinach and your select spices together.
Pour half the sauce on bottom of 13 X 9 baking dish.
Lay down 3 uncooked pasta noodles on top of sauce then spoon on half the spinach tofu filling.
lay out circle slices of squash, zucchini and eggplant.
lay down three more noodles and then tofu mixture and veggies again
lay down three noodles and then pou the rest of teh sauce over the top.
place in oven bake at 375 for one hour.
