Introduction

Ingredients

    2 pounds of roasted leg of lamb
    1/2 16 oz package frozen mixed vegetables
    1 cup frozen (cooked) lima beans
    1 at (4 cups) organic beef broth
    Left-over lamb stock, about 2 cups
    1/2 medium red onion, chopped.

Tips

Refrigerating overnight brings all the lamb fat to the top, where it can easily be removed if the "richness" and calories are undesired.


Directions

Bring meat stocks with fat, cooked lamb cubes with fat, and onions, to a boil; reduce heat to high simmer. Cook 10 minutes to blend flavors. Add mixed vegetables. Simmer at least 30 minutes. Serve in bowls.
