this is a quick & easy quiche to make - great for a brunch or just a quick weekend breakfast this is a quick & easy quiche to make - great for a brunch or just a quick weekend breakfast
Number of Servings: 8

Ingredients

    6 Medium Eggs
    4 Tbsp Salsa
    4 Tbsp Bacon Bits
    1/2 C Cheese
    2 C Hash Browns
    Salt & Pepper to taste

Tips

You can substitute the salsa with chopped peppers and onions, or substitute the bacon bits with chopped ham.

You can also add challots, mushrooms and pretty much anything else you would add to a omlette.

Directions

In oiled pan - prepare hash browns per packaging instructions (browned)
In a seperate bowl, combine eggs, salsa, bacon bits, cheese, salt & pepper.
Pour egg mixture over cooked hashbrowns and cook at medium temperature until eggs are firm.
Serve either hot or chilled.

Serving Size: Makes 8 2X2 Pieces
