Number of Servings: 20

Ingredients

    Ground beef--1 lb.
    Italian sausage--1 lb
    2 large eggs
    2 cloves garlic
    Parsley, dried--2 t.
    Salt, 1 t.
    Pepper, 1/2 t.
    Basil, dried--1 t.
    Oregano, dried--1 t.
    1 c. dried (Italian seasoned) bread crumbs
    Parmesan cheese, grated, 1/2 c.

Tips

This should produce about 40 meatballs/2 per serving. They freeze well--probably 8-12 weeks max.

Works nicely in the slow cooker also.


Directions

Mix ground beef and Italian sausage together with two eggs. Add seasonings, bread crumbs and cheese--kneading together. The meat mixture will be stiff.

Using wet hands, take about 2 T. mix and form into a ball; rewet hands if necessary--roll the ball between the palms of your hands, squeezing to make firm. I do not bake the meatballs but place them in spaghetti sauce that I've started.

Cooking time will vary, depending on whether the spaghetti sauce is already hot or not.
