Irish Soda Bread

Introduction

I got this from the Barefoot Contessa's show. It is really good and moist. The best Irish Soda Bread I have ever made. It can be toasted and still very moist and tasty. Number of Servings: 14

Ingredients

    4 Cups Flour
    4 Tbs Granulated Sugar
    1 tsp Baking Soda
    1 1/2 tsp Salt
    4 Tbs Unsalted Butter, Cold and cut into 1/2 inch dice
    1 3/4 Cup Buttermilk (I used Fat Free and added some Vinegar)
    1 egg, slightly beaten
    1 tsp orange zest
    1 cup currents--coat with 1 Tbs flour (I used Craisins)

Directions

Combine the first 4 ingredients with mixer. Add the diced cold butter.

Mix together Buttermilk, egg and zest. Mix in with the dry ingredients and butter mixture.

Coat the currents with 1 tbs flour and mix into dough. Mixture will be very wet. Pour out onto floured board and kneed into a round loaf.

Don't forget to cut a cross into the top. This not only looks good but it also gives a good escape for the soda to work.

Cut into 1/2 inch slices. This is so moist it can be toasted and eaten with nothing on top or you can add pure fruit jam on top. Warm, fresh out of the oven is the best.
