Introduction

This is a flexible recipe. I often substitute dried cranberries or raisins for the blueberries; you can also use applesauce, banana, cinnamon, etc. Also, any nuts work; I have also used chopped walnuts or sliced almonds This is a flexible recipe. Number of Servings: 8

Ingredients

    1 and 1/3 cup uncooked oatmeal (any kind)
    2/3 cup Bisquick Heart Healthy baking mix
    1 tsp baking powder
    4 Tbsp brown sugar (I use Splenda brown sugar)
    6 Tbsp ground flaxseed meal
    3/4 cup milk (I use 1%, any will work)
    1 cup blueberries or 1/2 cup dried fruit
    1/4 cup chopped pecans

Tips

You can be creative, this recipe is flexible. Try different fruits, remember to use half the amount if you use dried fruits. Any nuts work or no nuts at all. Also cinnamon is great in these.


Directions

Preheat oven to 400 degrees; bake 20 minutes.
Combine the first 6 ingredients.
Fold in the fruit of your choice.
Use a muffin pan and cupcake liners or form into 8 mounds on a baking sheet
