1 can of black beans rinsed 2 mangos pealed and chopped 1 avocado chopped 4-6 green onions chopped 2-3 fresh cilantro chopped lime juice from 1 lime salt & pepper to taste
chop and mix all ingredients and refrigerate over night. serve with grilled fish or chicken or over salad greens. Good with creamy avocado salad dressing that I found here and saved to my cookbook. Also I said makes 20 servings and that is just a guess, I usually put about 2 Tbs on anything and since those are heaping Tbs. its a rough guess. If you like things more spicy you can also add a chopped jalapeno or hot sauce.
