Spicy Catfish with Corn & Tomato Salad

Number of Servings: 4

Ingredients

    4 catfish fillets (about 6 oz each-tilapia would work too)
    1 Tbsp olive oil
    2 Tbsp blackening spice (aka Cajun or Creole seasoning) - divided
    2 cups frozen, thawed, drained
    2 large tomatoes, seeded & chopped
    3 scallions (green onions) medium sized, chopped at an angle
    1/4 cup chopped cilantro + 2 Tbsp for garnish
    1 Fresh lime, juiced, seeds removed
    Salt

Directions

Make the corn & tomato salad first.
Put corn, tomatoes, scallions, cilantro, and the juice of one lime into a serving dish. Gently stir, set aside.

Fish: Coat both sides of fish with oil and equal amounts of the 2 tablespoons of blackening seasoning. Grill on high about 5-7 minutes each side-depending on thickness of your fillets- until it flakes with a fork.

Sprinkle salt, to taste, into corn & tomato salad. Serve along-side or on top of the fish. Garnish with remaining cilantro & if you like, wedges of lime. This is great with freshly cooked grits!

Serves 4.

Add more seasoning if you like your food spicy. Add more lime juice if you like things a bit tart.
