Introduction

I started with the recipe submitted by Spark People user, Truthisbeauty and used whole wheat flour, yogurt, oil and used less sugar. Calories are slightly more but I think they're more healthful. Ingredients

    3 ripe bananas, mashed
    6 oz. low fat Greek yogurt (Suggestion: Chobani pineapple - 160 calories)
    1 egg
    1/3 Cup Canola Oil
    1/2 Cup granulated sugar
    1 1/2 Cups Whole Wheat Pastry Flour (Suggestion: Bob's Red Mill)
    1 tsp. baking soda
    1 tsp. baking powder
    4 Tbs. mini chocolate chips
    Pam

Tips

These are so moist and delicious! Bon Apetit!


Directions

Mix mashed bananas, yogurt, egg and oil in a mixing bowl. Add dry ingredients and chips and mix just until combined. Spray 2 muffin tins with Pam and fill each about 1/2 full.
Bake at 360 to 375 degrees (depending on your oven) for 16 - 18 minutes. Test with toothpick.

Serving Size: Makes 24 muffins
