Chocolate Zucchini Bread

Ingredients

3/4 c Brown Sugar
3 Tbsp Canola Oil
1/2 c Egg Substitute
1 c Unsweetened Applesauce
2 c Whole Wheat Pastry Flour
2 Tbsp Unsweetened Cocoa Powder
1 1/4 tsp Baking Soda
1 tsp Ground Cinnamon
1/4 tsp Salt
2-3 c Shredded Zucchini
1/2 c Chocolate Chips

Directions
Preheat oven to 350
Combine first 3 ingredients in a lg bowl; beat with a mixer @ low speed until well blended. Stir in Applesauce.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour & next 4 ingredients (through salt), stirring well with a whisk. Add flour mixture to sugar mixture, beating just until moist. Stir in zucchini & chocolate chips. Spoon batter into a 9x5" loaf pan coated in cooking spray. Bake @ 350 for 1 hr or until a wooden pick inserted in center comes out almost clean. Cool in pan 10 min on a wire rack, then remove from pan; cool completely on wire rack.
