IntroductionFrom Nancie McDermott's Quick & Easy Thai, for my family's logging purposes From Nancie McDermott's Quick & Easy Thai, for my family's logging purposes
3/4 lb rice noodles (dry)
5 large leaves lettuce (~3 c shredded)
3 medium tomatoes, chopped
3 Tbsp vegetable oil
1 Tbsp soy sauce
1 Tbsp garlic, coarsely chopped
3/4 lb ground beef
2 Tbsp fish sauce
1 tsp curry powder
1 tsp sugar
1 1/2 c chicken broth
2 Tbsp cornstarch, dissolved in 3 Tbsp water (I used remaining broth from the can)
1/4 c cilantro, chopped
Although recipe gives calorie counts including fat, draining the fat (which McDermott doesn't specify in her recipe) helps keep the greasiness (& fat levels) in control. Original recipe was for 4 servings.
