Quick Cranberry Chicken

Introduction

Leftover chicken? You've got a meal in a hurry. Leftover chicken? You've got a meal in a hurry.
Number of Servings: 6

Ingredients

    2 cups chopped vegetables, mix of onion, celery, mushrooms and peppers
    400 gm chicken breast, chopped
    .5 cup craisins
    2 Tbsp lemon juice (juice of. 5 lemon)
    Seasonings to taste

Directions

Cook the vegetables together in a non-stick frying pan until tender. Add the chopped chicken and the cranberries and mix. Squeeze half a lemon over it all. Cover and cook over medium to low heat until thoroughly heated. Season to taste.
