Sheperd's Pie

Introduction

Number of Servings: 9

Ingredients

    16 oz extra lean ground beef
    1/2 cup diced celery
    1/2 cup diced carrots
    1/2 cup diced fresh sweet red peppers
    1 cup fresh diced mushrooms
    1/4 cup fresh diced chives
    2 cups mashed potato flakes
    3 tsp ground rosemary
    2 tsp garlic powder
    1/2 cup plain breadcrumbs
    1/8 cup 3 cheese blend grated cheese
    2 tbsp low moisture part skim mozzerella
    2 cups water

Directions

Pre-heat the oven to 375*
In a large skillet over medium heat, sweat the veggies. when soft, add the beef and cook until done. Meanwhile, heat the 2 cups water in a microwave safe bowl for 3 minutes. then add the potato flakes and 3 cheese blend, and stir. In another bowl, mix the breadcrumbs and mozzerella, and place aside. In a 9"x9" over-safe dish/pan/tray, layer meat mixture, potatoes then breadcrumbs. Place in oven until topping is golden.
