Brunch Egg Casserole

Number of Servings: 10

Ingredients

    1 lb. lean turkey sausage
    (cooked, drained and crumbled)
    41/4 cups of wheat lite day old bread
    2 cups shredded cheddar cheese
    10 eggs, slightly beaten
    4 cups 2% milk
    2 tsp mustard
    1 tsp. salt or salt substitute
    1/4 tsp. onion powder
    Fresh pepper to taste
    1/2 cup chopped mushrooms (optional)
    1/2 cup peeled ,chopped tomatoes with chillies (optional)

Directions

Place bread in well-buttered 9 by 13'' baking dish. Sprinkle with cheese. Combine eggs, milk, mustard, salt, onion powder, and pepper. Pour evenly over bread and cheese. Add optional ingredients now if desired. Sprinkle turkey sausage over top. Cover and chill overnight. Preheat oven in morning to 325 degrees. Bake about 1 hour uncovered. Tent with foil if top begins to brown too quickly. Cut into 10 servings.
