Red Potato Salad (1 Cup)

Ingredients

    5lbs Red Potatos
    6 Hard Boiled Eggs
    1 Small Onion
    1 Cup Miracle Whip
    1/4 Cup Mustard
    1 Tbsp Paprika

Directions

Hard boil eggs, set aside.
Chop onion finely and put in large bowl, set aside. Chop potatoes, boil until desired tenderness, drain. Place hot potatoes into large bowl and toss with onion. Crack and peal eggs, use an egg slicer to chop finely, then toss with potatoes.
When potatoes cool (no more steam), add miracle whip and mustard, toss to coat thoroughly. Refrigerate for at least 30 minutes. Sprinkle with paprika to serve.
