Introduction

Simple and delicious dish to use up some eggplant. Serve with a salad and falafel. Simple and delicious dish to use up some eggplant. Serve with a salad and falafel.
Number of Servings: 6

Ingredients

    1 Large Eggplant, peeled and diced
    1/2 tsp salt
    1 medium green pepper, diced
    1 medium onion, diced
    1 (15 oz) can diced tomatoes
    Breadcrumbs and or wheat germ
    2 tsp olive oil

Tips

**8 slices of cooked and crumbled bacon may be added with the tomatoes if desired.


Directions

Preheat oven to 325. Add eggplant to saucepan, cover with water and 1/2 tsp salt. Bring to a boil over med heat and boil 10 min.
Drain eggplant thoroughly
Saute onion and pepper in skillet, add tomatoes
Add eggplant, toss to combine.
Spoon mixture into casserole dish. Sprinkle breadcrumbs/wheatgerm over top of eggplant and spray or drizzle with olive oil.
