Vegetable Turkey Barley Soup

Ingredients

    10 oz ground turkey
    4 c. chicken broth
    1/2 cup raw onions, chopped
    1/2 cup celery, chopped
    2 garlic cloves, minced
    1 c. mixed frozen vegetables
    1 can diced tomatoes
    1/2 cup pearled barley

Directions

Saute ground tukey, drain fat. Add 4 cups low-sodum chicken broth, celery, onion, 1 tsp oregano, 1/4 tsp. pepper and minced garlic. Cover; simmer 45 minutes. Add 1 cup frozen veggies, diced tomatoes, and barley. Cover; simmer 30 minutes.
