Spicy Ethiopian Tomato-Lentil Stew

    See above. Onion, carrots, and tomaotes are chopped; garlic minced; ginger grated.

Directions

Cover lentils with about 2" water and simmer for 45 minutes. Saute onions and carrots in large pan for 10 min. Add spices and simmer 5 minutes; add garlic and ginger and simmer 5 more. Add chopped tomatoes and cook 10 minutes. Stir in tomato paste, water, bouillion. Cook another 10 minutes. Add lentils and peas; cook 15 minutes.
