Gluten Free Shrimp and Pasta for One

Number of Servings: 1

Ingredients

    60 grams corn pasta
    4 oz cooked shrimp (tails removed)
    3/4 Tb butter
    1/2 Tb Extra Virgin Olive Oil
    5 Fresh Basil Leaves
    1/4 tsp crushed red pepper
    2 cloves garlic, minced
    1 Tb Lemon juice
    1 Tb grated parmesan cheese

Directions

1. Boil the pasta according to package directions.
2. While pasta is cooking, melt butter in sautee pan over medium heat. Add olive oil, garlic, basil, red pepper, and salt, pepper, and dried oregano to taste.
3. Add shrimp. Heat through.
4. Add lemon juice.
5. Spoon pasta into sautee pan. Spoon some of the pasta water into the sautee pan as well (it acts as a binder).
6. Add parmesan cheese. Still well. Serve immediately.

Serving Size: Makes 1 dish of pasta
