Balsamic vinegar does magical things to chicken. It's been a favorite among friends and family of mine for years, and I serve this to guests for an easy, impressive meal. It takes awhile, but worth it! Balsamic vinegar does magical things to chicken. Ingredients

Pound of chicken thighs
2/3 c balsamic vinegar
1/3 c extra light olive oil
2 tbsp dijon mustard
1 packet of honey
2/3 c soy sauce
1 oz. red wine
1 tbsp freshly chopped tarragon
3 cloves of garlic
salt and pepper
Tips
Breasts can be used as well.
Directions
Preheat oven to 400 degrees.
In a bowl, add balsamic vinegar, olive oil, mustard, honey, soy sauce, and wine, whisk together.
In a glass pan, addd chicken. Salt and pepper both sides.
Pour balsamic vinegar mixture over chicken.
Cover thighs with herbs and garlic.
Bake for one hour, or until tops are crispy and chicken is done.
Serving Size: makes 8 thighs
