Vi Cheese Pizza

Ingredients

    1/2 cup part skim ricotta cheese
    1/2 cup quick oats
    1 scoop Vi shake mix
    3/4 tsp baking soda
    1 tsp italian seasoning
    3/4 cup egg whites or egg beaters
    1/2 cup pizza sauce
    4 oz. part skim mozzarella

Directions

Mix ricotta, oats, vi shake, baking soda, seasoning and eggs into blender and mix thoroughly. Lightly dust the surface of the counter and roll into a circle. Place onto a pizza stone or baking sheet and bake at 400 for approx. 5 minutes until crispy. Remove, cover with sauce and cheese, and bake until cheese is melted.

Serving Size: Makes 2 servings as an entree or 4 servings as a snack
