No Pasta Lazagna

Introduction

Number of Servings: 4

Ingredients

    Peppers 1 cup,
    Onions raw, 1 small
    Jalapeno Peppers, 1 pepper optional
    Mushroom white button, 8 ounces
    Canned tomatoes Hunts no salt added, 1 can
    Pasta Sauce Prego - Heart Smart Traditional, 1 cup
    Ideal No Calorie Sweetener, 1 packet Optional
    Spice to taste
    suggestions
    Mrs Dash, Black and or Red Pepper Pepper Garlic

    Spaghetti Squash, 3 cup
    Cheese Mix (see recipe)

Tips

Let cool about 10 min before cutting it helps
Be sure to add the nut. info from the cheese mix too


Directions

Pierce Squash all over (about 7 times)
Put in 450 degree oven for 40 min
Let cool a bit
Slice in half lenghtwise
let cool completely
Take out seeds
Scrape the flesh out with fork to get "Spaghetti" strands
set aside on paper towel

In deep skillet over low heat add everything but the Squash
Add Spices
Let simmer til some of the juice from the tomatoes has reduced down

In a casserole pan that has been sprayed with non stick spray
1/2 squash covering the bottom in a "layer"
1/2 Tomato veggie mixture
1/2 of the amount of Cheese mix
Repeat
Bake for 45 min to an hour depending how soupy your tomato layer is.
