Ingredients

3 lbs red potatos with skins
4 carrots, peeled and cut into 2 inch sticks
1 onion
3 Tablespoons olive oil
1 teaspoon season salt
1/2 teaspoon black pepper
Tips
The "makes 8, 1-cup servings" is a guess on my part. I hope it's right!
Directions
Preheat oven to 375 degrees. Quarter potatoes. Cut onion into large wedges. Peel carrots and cut into 2 inch strips. Toss with olive oil, salt and pepper. Place in roaster pan in oven for 45 minutes, mixing when 1/2 done.
