Savory Summer Tomato Pie

Introduction

The best summer meal ever! Make savory summer tomato pie when you have plenty of red, ripe tomatoes. The best summer meal ever! Make savory summer tomato pie when you have plenty of red, ripe tomatoes.
Number of Servings: 1

Ingredients

    1 frozen pie crust
    4 red ripe tomatoes, sliced thinly
    4 oz mozzarella cheese
    .5 cup Parmesan cheese (shredded, not grated)
    2 Tbsp chopped onion
    2 Tbsp fresh basil, thinly sliced
    1 Tbsp oregano
    Salt and pepper to taste

Directions

Preheat oven to 350. Bake the pie crust according to directions. While the crust is cooking, slice the tomatoes and mix with the spices in a medium size bowl. When the crust is done, remove from the oven. Layer half the tomatoes and top with half the cheeses. Repeat the layers, ending with cheese on top. Bake 30 minutes. Let cool for 10 minutes before eating.
