16 oz Tri-Color or Verde Pasta
16 oz Chicken Breast, no skin
8 oz Neufchatel (low fat cream) Cheese
2 - 14.9 oz cans Hunts diced tomatoes w/basil, garlic & oregano
5/8 cup Basil
2 tsp Olive Oil
In a blender, puree basil and 1 tsp of olive oil for pesto, and set aside.
In a skillet, saute chicken in 1 tsp of olive oil until fully cooked. Turn to low hear and then add cheese to a creamy sauce.
Plate pasta, tomatoes, chicken sauce then pesto. Serve with small salad for complete meal.
