Ingredients

Buttermilk, lowfat, 1 cup
Kellogg's Raisin Bran Cereal, 1.5 cup
Egg, fresh, 1 large
*Splenda Brown Sugar Blend, .25 cups
*Canola Oil, .25 cup
Banana, very ripe fresh, 1 small (6" to 6-7/8" long)
Vanilla Extract, 1 tsp
*Flour, white, .75 cup
Old Fashioned Oats, 0.5 cup
Baking Soda, 1 tsp
Baking Powder, 1 tsp
Almonds, .75 cup, ground
Blueberries, fresh or frozen and defrosted, 1 cup
Tips
Other fruit could be used instead of the blueberries, such as chopped apples. Use maple flavoring instead of vanilla and add 1 tsp cinnamon.
Directions
In medium bowl, mix buttermilk with wheat bran and oatmeal. Let sit for 15 minutes to soften.
If blueberries are frozen, defrost in the microwave for 2 minutes.
Meanwhile, in another bowl mix egg, sugar, oil,vanilla and mashed banana. When your 15 minutes are up, start your oven (400 degrees), add oatmeal and bran mixture to egg mixture. Stir in four, baking soda baking powder, and nuts. Gently fold in blueberries.
Spoon approximately 1/4 cup into muffin cups. Bake for 20 minutes or until tops are lightly browned.
