Number of Servings: 4

Ingredients

    6 cups diced potatoes
    2 cups skim milk
    1/2 cup diced carrots
    6 oz. light Velveeta

Tips

Garnish with bacon bits, cheddar cheese and green onions. (Not included in nutrition calculation)


Directions

Boil potatoes and carrots until softened. Drain. Add Velveeta cut into cubes and milk. Simmer on low to warm milk and melt cheese.
