Cruncy shrimp salad



Introduction

Tangy, sweet and crunchy shrimp salad can be served on it's own or as a sandwich filler Tangy, sweet and crunchy shrimp salad can be served on it's own or as a sandwich filler
Number of Servings: 4

Ingredients

    1/4 C fresh lime juice
    2 T chopped fresh cilantro
    1 T soy sauce
    2 t sugar
    3/4 pound frozen cooked baby shrimp thawed, can use canned shrimp
    1/2 C chopped red bell pepper
    1 stalk celery, chopped
    1 scallion (green onion), chopped

Directions

Combine the lime juice, cilantro, soy sauce and sugar in a bowl. Stir in the shrimp, bell pepper, celery and scallion.

Serve on it's own or use in a sandwich for a healthy alternative to lunch meat.
