Lemon-Chicken Velvet Soup

This is a quick and easy soup for those busy days. This is a quick and easy soup for those busy days.
Number of Servings: 2

Ingredients

    3 tablespoons butter
    3 tablespoons all-purpose flour
    2 cups low-sodium chicken broth
    3 tablespoons lemon juice
    1-1/2 cups cubed cooked chicken breast
    10 fresh or frozen sugar snap peas
    3 tablespoons half & half

Directions

In medium saucepan, melt butter. Stir in flour until smooth, gradually add broth and lemon juice. Bring to boil and stir for 1-2 minutes or until thickened.
Stir in chicken and peas; cook for 2-3 minutes. Stir in half & half; heat through (don't let boil). Serve.
