Bean and tomato broth

Introduction

Wholesome broth warm and filling Wholesome broth warm and filling
Number of Servings: 6

Ingredients

    1 tbsp oil
    1 onion
    1 can of chopped tomatoes
    1tsp 25 gms tomato paste
    1 knorr vegetable bullion cube (no salt)
    2 cups red kidney beans
    2 cups of cannelini or borlotti beans ( OR BOTH )
    2 cups tap water
    1/2 cup barley
    1/2 cup lentils
    1 tsp cayenne pepper

Directions

Place chopped onion in oil, cook until tender not browned.Add tomatoes add paste. Then add knorr vegetable cube, add barley & lentils and tap water simmer for 40 mins, add beans and more water if necessary add seasoning cook for a further 5mins. Taste to see if the barley and lentils are cooked. if not cook a little longer.

Serving Size: 5- 1 bowl servings
