2 pounds chicken wings, meat and skin, raw
2 tablespoons Old Bay Seasoning
1 tablespoon garlic powder
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon cayanne pepper, ground
1/2 cup chicken wing sauce
1/4 cup Tabasco Sauce (hot sauce)
1 tablespoon lemon juice, fresh or bottled
1 tablespoon cumin powder
3 tablespoons chicken broth
For a milder wing sauce, omit 1/4 cup Tabasco Sauce, or add by tablespoons to desired heat. Cumin Powder can be omitted, but I find it give the wings an additional flavor and punch.
Place wings in large dutch oven and fill with water, coverning by 2 inches. Season water with Old Bay, garlic powder, salt and peppers. Place on stove and bring to boil over high heat; reduce heat and continue boiling for about 10 minutes.
Transfer wings to a broiler pan and broil, 5 to 6 inches from heat, until the skin begins to blister and brown; about 5 to 6 minutes. Turn wings over and broil 5 minutes more.
While wings broil, in a large bowl (large enough to hold wings when done), mix together the wing sauce, hot sauce, lemon juice, cumin, and chicken broth.
Transfer wings from broiler pan (sit pan aside) to bowl with the sauce, toss wings to coat completely.
Transfer wings back to broiler pan and broil for 1 to 2 minutes to heat wings and sauce. Pour onto a platter and serve immediately with your favorite wing dip.
Serving Size: Makes 4 8-ounce servings.
