This is a bean stew that can be enhanced in many ways. Fresh spinach can be added, but I prefer to serve a spinach salad with orange sections and a basalmic vinaigrette. Ingredients

1 T minced garlic
1/2 c. scallions
1 cup fresh broccoli, chopped
1 T coconut oil
1 can cannellini beans, rinsed and drained (1 3/4 c.)
1 can chick peas, rinsed and drained (1 3/4 c.
Tips
Spinach can be added the last 5 minutes, just until slightly wilted.
It can be served as a sauce over pasta such as whole wheat angel hair pasta.
Directions
lCook garlic, scallions and broccoli in 1 T. coconut. Stir until onions are translucent. If garlic starts to brown too much, add water. (approximately 1/4 c.)
Add cannellini beans and chick peas.
Add 1 c. water and 1 t. chicken soup base.
Simmer about 20 minutes to meld flavors.
Serve as a main dish stew, or over angel hair pasta.
