Tabouli - Tuna Salad

Ingredients

    8 oz Tabouli wheat without seasoning
    2 cans Tuna in water, drained
    1/2 c Celery, chopped
    1/4 c Onion, chopped
    1 Large Apple, with peel, chopped
    1/2 c Fat Free Mayo
    1/4 t dill
    4C lettuce, chopped

Directions

Soak wheat in hot water for 15minutes to plump. Drain through an extra fine seive or lay coffee filters in the bottom of strainer. Rinse will cool water to chill.

Drain tuna, add celery, onion, apple, mayo and dill. stir well. Add cooled wheat and stir to combine. Chill 2 hours or overnight. Serve on lettuce bed.

Makes 4 1 cup servings.
