Sausage & Hashbrown Breakfast Bake

Number of Servings: 12

Ingredients

    1 lb ground sausage
    3 cups frozen hashbrown potatoes
    1 can cheddar cheese soup
    1/3 cup 1% milk
    1/3 cup light sour cream
    1/2 cup shredded cheddar cheese
    4 cups salsa

Directions

Brown sausage and drain fat. Return to skillet and add hashbrowns, stir until thawed. Combine cheddar cheese soup, milk and sour cream in a bowl, stir until smooth and add to mixture in skillet. Stir to coat sausage and hashbrown with liquid mixture. Top with shredded cheese and bake at 350 for 30 minutes or until bubbly. Serve with a side (1/3 cup) of salsa to mix before eating.

Serving Size: makes 12 cup servings
