1 7 oz. can diced green chili's
3 T sour cream
1 C onion, diced
1/2 20 oz. can of diced tomato (~1.5 C)
3/4 C shredded Co-Jack cheese
Saute onions in non-stick pan till soft.
Add eggs, chili's, sour cream, and 1/4 C cheese.
Whisk to blend.
Spray pan (~ 13x9) with cooking spray.
Pour egg mix in pan and top with reserved cheese
Bake till set in center, 25-35 min.
Cut in 8 equal pieces
Serve warm or cold, with sour cream and salsa if desired.
