Hmong Coconut Curry Soup Base

This is a simple soup we make and serve over rice noodles. Feel free to add any meat (pork, chicken, or I tried it with Tofu) and we garnish with chopped cilantro, green onion, thinly sliced cabbage, and a squeeze of lime. None of this is included in the nutrition facts, this is simply the soup base. Also add garlic chili oil or other seasonings to taste. *Please Note - yes the sodium may be high, this is an asian dish and not something we eat every day. Every once in awhile you can splurge! Ingredients

12 cups water
1 cup coconut milk
1 tbsp red curry paste
3 tbsp low sodium curry paste
1 packet wonton soup dry mix
1 cup bamboo strips
1 sprig of lemongrass to boil in the water (for taste, do not eat)
Tips
Directions
Bring the water to boil with the lemongrass. Add all ingredients and simmer 15-20 min for flavors to blend. Serve hot over rice noodles and with your favorite protein (not included in nutrition facts).
