Arroz con chorizo (2 c)

Introduction

Number of Servings: 4

Ingredients

    Salsa:
    2 tomatoes, chopped into 1/4" dice
    1 large clove garlic, minced
    1 serrano pepper, chopped fine
    1 small onion, chopped fine
    3 Tbsp cilantro

    Rice:
    1 c rice
    3/4 c chicken broth
    2 small zucchini, 1/8" dice
    1 ear corn, cut off cob
    1/2 tsp salt
    1 package chorizo

Tips

Fat content listed is higher than actual fat content (chorizo is drained)


Directions

Chop salsa
Fry up chorizo, then drain. Reserve 1 Tbsp fat.
Heat broth & salt.
Saute rice 7 min, add salsa, cook 7 min. Add hot broth, cook 10 minutes, covered. Add corn, zucchini & chorizo, cook another 5-10 min. Let rest.

Serving Size: Makes 4 2 cup servings
