Mexican Rice

Number of Servings: 15

Ingredients

    2 cups (dry) rice, cooked per package directions
    1 rotisserie chicken
    1 can corn
    1 can black beans, rinsed
    1 jar salsa
    1 can diced green chiles
    1 bag shredded mexican cheese

Tips

This recipe may be halved in order to fit an 8x8 or 9x9 pan.
Use a spicier salsa than normal, since the rice mutes the spicy flavor.
We love this wrapped in tortillas or scooped with tortilla chips for a fun weeknight meal!


Directions

Remove all meat from the chicken and shred into bite-size pieces.
Lightly grease inside of pan.
Combine rice, chicken, salsa, corn, and chiles.
Gently stir in black beans.
Cover with cheese and bake at 350 until heated through and cheese has melted.

Serving Size: Makes a full 9x13 pan-- enough to feed a crowd!
