Introduction

Number of Servings: 10

Ingredients

    3-4 Cups diced up cooked turkey. more or less
    1/2 onion diced
    1 can mexicorn
    2 cans diced tomatoes (i used 1 fire roasted w garlic and 1 plain)
    2 cans pinto beans drained
    .5 pound chorizo (I had some leftover chorizo in the freezer and threw it in for extra flavor)
    1 cup of reduced sodium chicken broth
    1 shot of Tequila (because you can't have good mexican food without Tequila)
    olive oil to coat bottom of dutch oven

Tips

I used left over smoked turkey. Smokey flavor seemed to compliment the fire roasted tomatoes.


Directions

Heat stove top to Med or Med High, oil the dutch oven start the diced onion, add the chorizo and cook till onion is clear. add diced turkey, chicken broth, drained mexicorn, tomatoes and drained pinto beans. Get to a simmer, stir in the shot of tequila for some extra flavor, then transfer to 350 degree oven for 25-30 minutes.

Serving Size: makes approx. 8-10 1 cup servings
