Tilapia Mexicali

Ingredients

    Cooking Spray
    1 cup tortilla chips, finely crushed
    1/2 tsp cumin
    1/2 tsp chili powder
    2 tbsp lime juice
    2 tbsp vegetable oil
    3 Tilapia fillets, about 1 pound total
    1 cup fresh salsa

Directions

1. Preheat oven to 400
2. Coat a baking sheet with cooking spray
3. Mix finely crushed tortilla chips, cumin, and chili powder in a shallow bowl
4. Mix lime juice and oil in a non-metallic bowl
5. Rinse tilapia in cool running water and pat dry with paper towel
6. Dip tilapia in lime juice mix, then dredge in tortilla chip mixture. Coat well.
7. Place in one layer on baking sheet. Bake for 10-20 minutes until fish is no longer translucent at the thickest part and flakes easily with a fork
8. As fish is baking, warm salsa in a small pan over low heat
9. Remove fish from oven, Arrange fillets on plates and spoon salsa over fish. Garnish with cilantro if desired.
